Tuscan Gnocchi
Ingredients
- Oil
- 2 Italian sausages
- Garlic
- 1/2 cup veggie broth
- 1/2 cup coconut milk
- 2 tsp lemon juice
- 2 tsp Italian seasoning
- 1/3 cup sundried tomatoes
- 1 lb uncooked gnocchi
- Salt & pepper
- 2 cups baby spinach
- 1/4 cup parmesan
- 1/4 cup basil
Instructions
- Sauté sausages until brown, then add garlic.
- Add broth, coconut milk, lemon juice, Italian seasoning, tomatoes, and gnocchi. Stir.
- Bring to a boil, lower heat, cook uncovered for 5-8 minutes, stir occasionally.
- Add salt/pepper and stir in spinach. Cook 1 minute.
- Stir in parmesan.
- Gnocchi should be cooked and not mushy. Sauce should have thickened. Cook until that's true.
- Serve.
