Tuscan Gnocchi

Ingredients

  • Oil
  • 2 Italian sausages
  • Garlic
  • 1/2 cup veggie broth
  • 1/2 cup coconut milk
  • 2 tsp lemon juice
  • 2 tsp Italian seasoning
  • 1/3 cup sundried tomatoes
  • 1 lb uncooked gnocchi
  • Salt & pepper
  • 2 cups baby spinach
  • 1/4 cup parmesan
  • 1/4 cup basil

Instructions

  • Sauté sausages until brown, then add garlic.
  • Add broth, coconut milk, lemon juice, Italian seasoning, tomatoes, and gnocchi. Stir.
  • Bring to a boil, lower heat, cook uncovered for 5-8 minutes, stir occasionally.
  • Add salt/pepper and stir in spinach. Cook 1 minute.
  • Stir in parmesan.
  • Gnocchi should be cooked and not mushy. Sauce should have thickened. Cook until that's true.
  • Serve.
